Cholesterol reduction is a common goal today and many people have been given the recommendation to lower their cholesterol intake, but an overlooked cause of high cholesterol is often an overworked liver. Approximately 70% of the cholesterol in your blood is actually made by your own liver. By eating a diet that is easy on the liver (specifically, one that is relatively low in protein and fat and high in vegetables and fruit), cholesterol can often be reduced much more effectively than by eating a diet that is simply low in cholesterol.
In fact, although eggs are often considered a forbidden food for those seeking to lower cholesterol, eggs are actually fine in small to moderate quantities for most people with elevated cholesterol, because they are low in fat (easy on the liver) and contain high levels of the nutrient lecithin, which has been found to lower cholesterol. Recent studies have shown that moderate egg consumption does NOT elevate serum cholesterol.
